Ingredients
2 bundles spinach/ 680g (if bundle equals bunch), 1½ tablespoon Oleev Extra Virgin Olive oil, 2 handfuls pitted raisins (about 2 ounces), 1 handful pine nuts (about 1 ounce) and Salt.
Working the magic:
Soak the raisins and pine nuts in water for 1 hour and drain
Wash the spinach thoroughly. Remove the stalks.
Bring ½ cup water to a boil in a pan. Drop the washed spinach in it, and cook them uncovered for few minutes over medium heat. Make sure that the water doesn’t evaporate completely. Add some water if necessary.
Drain the spinach. It is important that they have no water. Finely chop the spinach.
Heat 1½ tablespoons olive oil in a frying pan, and add the raisins and pine nuts. Sautee for 2 minutes over low heat, or until the raisins swells. Stir all the time. Add the drained spinach and a pinch of salt, and sauté for 5 to 7 minutes. Stir constantly to prevent sticking.
Serve hot.
